I would have assumed that the restriction of your voucher for Sunday-Thursday availability is due to an increased room cost on a weekend, the value of which your voucher does not cover.
I would advise therefore that when attempting to book, you enquire about whether it is possible to pay a supplement directly to the supplier to upgrade your package to allow for a weekend stay.
